Crunchy macadamia teriyaki salmon

Ingredients:
- 2 salmon fillets (approx. 150 g each)
- 2 tbsp macadamia nuts, chopped
- 3 tbsp teriyaki sauce
- 1 tsp honey
- 1 tsp sesame oil
- 1 spring onion, cut into thin rings
- 1 tbsp lemon juice
- 1 tsp soy sauce
- Salt and pepper to taste
Preparation:
- Stir together the teriyaki sauce, honey, sesame oil, lemon juice and soy sauce in a small bowl.
- Heat a skillet over medium heat and place the salmon fillets, skin side down. Sear the salmon for about 3 minutes.
- Pour the teriyaki mixture over the salmon and fry for another 2 minutes until the salmon is cooked through.
- Meanwhile, lightly toast the chopped macadamia nuts in a dry pan.
- Place the salmon fillets on plates and sprinkle with the toasted macadamia nuts and spring onions. Serve the salmon with rice or steamed vegetables.
