The yogurt cream is soft and clear, almost understated. The homemade red berry compote adds depth, acidity, and winter warmth – cinnamon, clove, a hint of cardamom. Makes 4–6 glasses

Ingredients

Yoghurt cream

  • 400g Greek yogurt (full fat)
  • 200 g cream
  • 2–3 tablespoons of icing sugar
  • 1 tsp vanilla extract or vanilla bean paste
  • optional: finely grated organic orange zest

Winter red berry compote

  • 300g mixed berries (raspberries, currants, cherries)
  • 200 ml cherry juice or red grape juice
  • 2–3 tablespoons of sugar
  • 1 cinnamon stick
  • 1 star anise
  • 1 pinch of clove
  • 1 pinch of clove
  • 1–2 tsp cornstarch
  • a little lemon juice, final component

preparation

Red berry compote

Gently heat the berries, juice, sugar, cinnamon stick, and star anise. Once the fruit is soft and begins to release its juices, briefly remove the spices.

Stir cornstarch with cold water until smooth, stir into the simmering fruit mixture, and thicken gently. Season with lemon juice, cloves, and cardamom. Remove the cinnamon stick and star anise. Let cool completely.

The gruel should be fruity, slightly sour, and have a warm, spicy flavor.

The yogurt cream

Whip the cream until stiff. Stir the yogurt with the powdered sugar, vanilla, and optional orange zest until smooth. Gently fold in the whipped cream until a light yet firm cream is formed.

Arrange

First, fill each glass with a layer of yogurt cream. Add a little red berry compote, allowing the fruit to settle slightly against the rim of the glass. Top with another layer of cream and finish with a layer of compote.

Finally, generously sprinkle the candied pistachios from Burghardt Delicious over the glasses.
